Ragda pattice is a popular Indian fast food or snack commonly found in Mumbai. It is usually found at places or stalls that offer chaat-based items such as bhelpuri or panipuri. This dish has two parts--ragda, a dried yellow pea soup and pattice, a fried potato cutlet.
Ragda is prepared by soaking white peas overnight in water to make them soft, hence easy to cook. After about 8 hours of soaking the old water is discarded. Add a fresh pan of water and pressure cook the peas along with flavoring agents such as haldi (turmeric powder) and salt until the peas are soft to touch. The peas are then mashed and fried with onions to make a "Ragda". Boiled mashed potato cutlets are added into this stew. Two or three of these pattice are covered with the stew-like ragda as a sauce and garnished with finely chopped onions, coriander leaves, spicy chutney and sweet sauce.
